Tawa Idly

One cold rainy evening, my stomach started to growl! I went to the refrigerator and saw leftover idlis from yesterday (it looked so inviting to me :-)). I wanted something spicy, so I decided to make "Tawa Idly" with vegetables in a very simple way. The main flavor of tawa idly is the "pav bhaji masala" and squeezing of lemon, which gives some tangy taste to your taste buds.

                                Cooking time: 15 mins
                                Serves: 4

Ingredients

Leftover Idly (cut into small cubes)

Onion (chopped)
1 medium
Tomato (chopped)
1 medium
Ginger (finely chopped)
1tsp
Green chillies (finely chopped)

Turmeric powder
½ tsp
Red chilli powder
1 tsp
Pav bhaji masala
      1 ½ tsp
Mixed veggies(chopped carrot, beans etc)
1 cup
Capsicum (chopped)
1 medium
Cilantro (chopped)
As needed
Salt
As needed
Oil
1 tbsp
Butter
1 tbsp

 Method


  • Heat a kadai with equal ratio of butter and oil. Add ginger and saute it for a min.Then add onion and fry till it turn transparent.
  • Add tomatoes, cook till the raw smell goes and it turns mushy.
                            


  • Once the tomatoes are cooked, add turmeric powder, red chilli powder, pav bhaji masala powder and salt. Give a mix and wait till oil separates from the masala.
  • After the masala is cooked, add the capsicum and veggies along with little salt. Saute for a min and allow it to cook for 5 mins.
  • Now add the idlis to the masala and give quick mix. Wait till the masala is absorbed by the idlis.                                               
  • Finally add the cilantro and squeeze lemon, mix for a second and put off the flame.
  • It is now ready to be served.

Tips

  • Leftover idlis should be refrigerated to avoid stickiness.
  • You can add veggies of your choice.
  • Squeeze lemon lastly and allow it to cook only for few seconds as it will taste bitter if it gets cooked for long time
  • This recipe can be served as snack, kids lunch box or even for dinner.
